Salmon Bisque 1lb caned pink salmon 450g cup butter 60ml cup chopped onion 60ml cup chopped celery 60ml 3tbsp flour 45ml 1 1/2tsp salt 7ml 1 cup liquid (salmon liquid plus water ) 250ml 2cups milk 500ml 1 cup tomato juice 250ml 2tbsp chopped parsley 30ml

Drain salmon, saving liquid. Flake salmon. Heat butter in large saucepan. Add onion and celery and cook gently 5 minutes, stirring. Sprinkle in flour in salt and stir to blend. Remove from heat. Measure salmon liquid and add enough water to make the 1 cup (250ml) liquid called for. Add , with milk, to butter flour mixture. Stir to blend. Return to moderate heat and cook until thickened and smooth, stirring constantly. Stir in tomato juice and parsley. Heat to simmering (do not boil). Add salmon and heat well. Serve immediately.

Fish chowder 4 slices bacon, cut up 4 slices 1 large onion. sliced thin 1 large 2 lb haddock 900g 4 cups thinly sliced raw potatoes boiling water 1l 2 tbsp butter 3oml 1tbsp flour 15ml 2 cups milk, scalded 500ml 1 tsp salt 7ml tsp pepper 1ml cup chopped parsley 60ml

Put bacon pieces in large heavy saucepan. Fry them until pan in well greased. Add onion and cook 3 minutes, stirring. Remove skin and bones from haddock and cut into 1- inch (2.5cm) pieces. Add to saucepan along with potato slices. Cover with boiling water. Bring back to boil, turn down heat, cover and simmer gently just until potatoes are tender, about 15 minutes. Blend butter and fl our and add to chowder, bit by bit, stirring well after each addition. Add hot milk, salt and pepper. Taste and add more seasoning if desired. Cover and simmer 5 minutes. Sprinkle with parsley and serve immediately.
